Ohmygod Garlic Scapes!

Two weeks ago I noticed these green curly stalks at my local farmers' market. I asked what they were and what to do with them, and took some home to sample. Garlic scapes. I am now obsessed. So far I've put them in a frittata and a stir fry, and pureed them with parmesan and olive oil to make the most divine garlicky pesto. The pesto was so good I'm making a whole lot more this weekend to freeze. Next I need to put them with potatoes somehow - that would be delicious. Anyway, if you have these in your area, buy them!

      I got two bunches from my CSA. i just made a pinach and garlic scape pesto which I plan to use later this week on pasta. It has a great, stong garlic flavor.

        Wah! I have not seen these, and I wonder if Trader Joe's carries them-No Cal?
        Anyone seen them? Wow they sound so delicious, and so many uses... I could really get into these.

          I roast them with green beans (tossed with a little olive oil and coarse salt) until they're all starting to brown. And a squeeze of lemon and anchovy paste is good too. Better than candy.

            Scapes are great - and can be frozen for use later! I just chop them up and throw in a freezer bag and when I want to toss a few in soup or stir fry they are ready to use!

              I just make a scape and potato hash - Dice it all and fry! They get nice and mellow when cooked. For an extra indulgance, fry in Duck Fat :)

              I also BBQ them right on the grill, tossed with a hint of OO and S&P.

              The only thing that drives me nuts - Cutting the really curly ones!

                yeah, i discovered garlic scapes this spring as well and they are pretty freakin awesome. To me, they taste like garlic, scallions, and asparagus bottoms mixed together. Amazing in omelets along with some good crusty bread.

                  Hi, I just harvested a huge amount of garlic scapes from our garden and went online to find a way to preserve them. Could you tell me what proportions you used for your pesto? What a great idea, and thanks!

                    I used a pound of garlic scapes and a cup of parmesan. I put some pine nuts in there too, maybe a cup. I just drizzled olive oil in the food processor until the texture looked right, so I have no idea how much that was. Pesto's pretty hard to mess up though. :-)

                    They have these in my area (NYC) , too. Thanks for the pesto idea--I've never known what to do with them and that sounds excellent.
