Need a simple impressive dish

Hi Everyone.

I'm having a potluck tomorrow night. So far people are bringing:

Apps - Finger Sandwiches & Wings
Entree- Roast Beef
Side Dish - Macaroni Salad
Dessert - Fruit Salad & Banana nut muffins

As you can see the menu is pretty casual. None of these items actually go together so I want to do a one pot dish or something that the roast beef can be eaten with. Usually I would drive myself crazy making an impressive, gourmet feast but I don't have the time. I thought of a gratin, but like I said time is an issue. Any suggestions??

    Looks like green veggies are missing from the menu. How about some roasted green beans with a sesame ginger dressing drizzled on?

        When I'm really in a hurry, I get a bottle of Newman's low-cal Sesame-Ginger. Otherwise, a little soy, a little minced pickled ginger or grated fresh ginger (depending on what I've got), a little minced garlic, some sesame oil, seasoned rice vinegar, check for salt and adjust, a little pepper, taste and add a pinch of sugar sometimes (depends on how the ginger is playing through the flavors), and chop some scallions into rounds for the finished product.

          Oh, if I don't have seasoned rice vinegar on hand, I'll usually use fresh squeezed lime juice.
