        <content>My favorite spot for peppery Teochew-style bak kut teh (pork-rib soup) is undoubtedly Founder Bak Kut Teh at Balestier Rd. Besides the pork-ribs (Founder uses only high-quality long ribs), other regularly-ordered dishes are:

- Braised pig's trotters in dark soysauce - melt-in-your-mouth goodness &amp; definitely one of the best in Singapore;
- salted mustard vegetables;
- pig's liver, kidneys, intestines &amp; stomach in a ginseng-scented herbal soup.
- Chinese crullers.

Founder's soup is much milder than the one by its bitter rival, Ng Ah Sio at Rangoon Rd - so much depends upon your personal taste.</content>

      <content>Malaysia's bak kut teh is mainly the Hokkien (Fujianese) variety, which is herbal &amp; has a mellower, more complex taste than Singapore's Teochew (Chaozhou) variety.

The best bak kut teh in Malaysia can be found in Klang, a seaport 40 km from KL, where about 4-6 well-known restaurants vie to be the best not just in Klang, but in Malaysia!</content>

      <content>I prefer Ng Ah Sio (&#40644;&#20122;&#32454;&#32905;&#39592;&#33590;&#39184;&#23460;) at 208, Rangoon Road. It'sonly open from 6 am to 2 pm every day (closed on Mondays), as I love my bah kut teh soup with lots of pepper. I remember the HK Chief Executive Donald Tsang had to dine at Founder after Ng Ah Sio refused to serve him dinner since they close at 2pm.

Ng Ah Sio is a favourite of politicians, eg there's a photo of Thaksin Shinawatra lunching there when he's Thai PM. Founder, on the other hand, is a favourite of media celebrities: their walls are covered with photos of stars dining there. The last time I went to Founder, Ang Lee and Chow Yun-Fatt stared out from the walls at me.

What I liked at Founder though, were that they serve only the long pork ribs, whereas Ng Ah Sio sometimes use odd-shaped, odd-sized pork ribs.</content>

      <content>You can order the long ribs in Ng Ah Sio but they will charge more.  But they run out of the long ribs quite quickly.  Don't forget about the pork kidney and pork legs in Ng Ah Sio.</content>

      <content>I lunched at Ng Ah Sio today. Hmm, poster-sized portrait of now-disgraced ex-Thai premier Thaksin Shinawatra lunching there had disappeared from the pride of place at the main entrance of the restaurant. Instead, it's been replaced by another poster-sized portrait of Taiwan's popular (at least, pre-Typhoon Morakot) Premier, Ma Ying-jeou, lunching there.

It's been a while since I was there, and Ng Ah Sio's pork-rib soup is still throat-burningly peppery as always (maybe a bit TOO peppery, in fact).

We ordered:
- pork-rib soup. The quality of pork ribs' not as good as Founder's - instead of long-ribs, they have a mish-mash of different rib cuts;
- blanched lettuce leaves - a bit on the bland side. I don't see any pickled vegie side-dish on their menu (unlike Founder's);
- soy-stewed peanuts. This one's PERFECT!! Much, much better than Founder's;
- stewed pig trotter - full of fat &amp; hardly any meat. Founder's version is miles ahead for this dish;
- fresh shitake mushrooms stewed in soysauce. This is delicious - my absolute favorite dish;
- fried yu-tiao (Chinese crullers) - pretty non-descript, just like Founder's. How come bak-kut-teh places in Singapore all serve such lousy yu-tiao?

I still rank Founder a bit ahead of Ng Ah Sio, but that's my personal taste. I prefer my bak kut teh soup with less pepper, and better quality cuts of pork-ribs.</content>

      <content>In NAS, you need to request for the long ribs, or else they will just serve the standard ones.  And very frequently, which is the thing I dislike about this place, is that they run out of long ribs quite often. It is not in the menu, and they will charge extra for the long rib.  And NAS is good for the offals...the kidney etc etc...yeah, I know those high cholesterol stuffs.  Yes, the soup is peppery, just like Yah Hua.</content>

      <content>Just say you want "long ribs" instead of "short ribs" on bar kut teh, they should be able to understand you.  They will charge a few dollars more but I think it is worth it. The problem in NAS is that they run out of long ribs very often.</content>

      <content>well bkt is sort of a breakfast thing, so i plan on going sorta of early...plus this is one dish i'm not sure my gf will like or not, so i might hit that Dai Dong Prawn Noodles after in case she doesn't like it and i may go there even if she does like it </content>
