Great recipe using snap peas?

My garden is now producing an abundance of snap peas. Yes, they are good raw, and I've been using them in a stir-fry with shrimp in a ginger/garlic/sesame sauce. Any other ideas? Thanks!

    1. Snap pea and quinoa salad. http://recipes.kaboose.com/sugar-snap...

Lucky you, to have an abundance of these yummy things!

        1. Last week I found a Caesar potato salad with radishes & sugar snap peas on epicurious.com. It was from Bon Appetit's June mag. It was delicious!

1 1/2 lbs unpeeled assorted fingerling potatoes or baby potatoes, cut cross-wise into 1/2" thick slices
8 oz trimmed sugar snap peas
          1 bunch radishes, trimmed, sliced
1/2 small red onion, thinly sliced
          1/4 cup olive oil
          3 tbsp fresh lemon juice
          1 tbsp Dijon mustard
          1 garlic clove, pressed
1/2 cup freshly grated parmesan cheese

Steam potatoes until almost tender, about 10 mins. Add sugar snap peas and steam until peas are crisp-tender and potatoes are just tender, 1 minute longer. Transfer to a large bowl. Cool slightly. Add radishes & onion. Whisk next 4 ingredients in a small bowl to blend. Whisk in Parmesan. Season dressing with salt & pepper. Add dressing to potato mixture; toss to coat. Season with more salt & pepper. Serve warm or at room temp.

That's it. It makes 6-8 servings. Enjoy!
