        <content>I am obtaining some fresh goat milk tomorrow, and am going to my friend's house for a cheese making visit.

I am using the ubiquitous Home Cheesemaking book from the NE Cheesemaking store.

I have rennet, but no starter culture, since I guess you can only order it online.

Can I still make Chevre?  Can I use live culture yoghurt or buttermilk or citric acid?

(bonus question-  where can one get starter in NYC? I got the rennet at Kalustyan's, which was a really fun experience.)</content>
