Impromptu dinner party.

My husband wants to invite another couple over for cocktails tonite. I like entertaining at home, but I wish he would have given me a little more time to prepare(!!!). Any ideas for dishes that will be easy & tasty? Thanks!!

  1. Are you looking for actual dinner ideas, or things to nibble on with cocktails?

    1. If it's nibbles, nothing is faster and pleases everyone more than deviled eggs.

      1. do you have a grill? I would grill up some pizzas and just get a bunch of toppings so people can pick there own.

        1. Easy appetizers: steam some asparagus, then spread with a bit of garlic mayo, then wrap in slice of ham (I usually use capocola, but thin sliced deli ham works too).

          Buy some frozen puff pastry and a small round of brie or camembert. Defrost the puff pastry, then roll out and wrap the cheese. Bake at 400 until the puff pastry is golden brown, then serve with sliced apples.

          Any good cheeses with any good crackers; add some sliced cured chorizo or salami if you like.

          Caprese bites: skewer a small piece of mozzerella cheese, a grape or cherry tomato, and some fresh basil on a toothpick. Drizzle EVOO and balsamic vinegar over top once you've made a bunch.

          Most everyone likes good mixed nuts - open the can and pour into a nice bowl, and serve.

          Buy the frozen mini phyllo cups, and defrost. Then sautee mushrooms and shallots in butter, add a bit of cream and fresh tarragon; fill the cups and serve.

          Think dips - spinach and artichoke, or blue cheese with veggies (carrots, celery, peppers) or pita chips

          These are the types of things I whip out when faced with unexpected company. If you need main dish ideas, let us know...

          1. I'm torn between doing just apps or a main. I bought a filet of salmon that I was planning to make for dinner, when I thought it as just me & DH. Is there any sort of app I can make with that, or should I just buy another salmon filet for the main? Hmmm.

            I don't have a grill, unfortunately. Some great ideas!!

              What about a salmon en croute, whether it's an appetizer or dinner? For dinner, just add more substantial sides.
