WANTED IN DENVER: High quality food with laid back atmosphere.

Hello all, my wife and i aregoing to Denver the weekend of the 13th of June. We are very particular eaters and CRAVE high quality, semi exotic, culinary experiences that dont require a tie and slacks. We DO NOT MIND spending the bucks as long as the atmosphere is laid back. I hve seen in previous posts that we gravitate to menues like Stubeins, NINE75, and BONES. I would also enjoy restraunts that have eclectic menues, out of the ordinary ethnic fare and technique over style...... ie (Bizare Food meets No Reservations meets Guys Big Bite meets Good Eats). So any and all ideas/recs are GREATLY appreciated. Once again, high quality/low snob factor regardless of price......Thanks!!!!!!

    1. This is Colorado, which is casual country. Notable exceptions are the most formal hotel restaurant like Restaurant Kevin Taylor in the Hotel Teatro and the Palace Arms in the Brown Palace Hotel. Also, while there are stylish dressed-up 20- and 30-somethings, well turned-out cougars and suavely dressed guys in the trendies making the bar scene in Cherry Creek and other high-end areas, but diners appear in most places in casual attire.Not ripped jeans and T-shirts, but just a notch above.

      1. I'm a little confused—are you saying Bones sounds good but you haven't been? If not, go. It's great. So (IMO, though a few would dissent) is its sister restaurant Osteria Marco. Domo might appeal to you as well (so-called country Japanese).
