Chinese Fiery Hot Noodles

Many years ago I worked in Manhattan and was a regular at a Chinese hole in the wall on 32nd St off of 7th Ave. My favorite dish there was something called "Fiery Hot Noodles" which as I recall consisted of Lo Mein noodles with a spicy sauce made with ground pork. I've been searching for a recipe for many years and would appreciate any help from fellow hounds. TIA

    You want Sichuanese Dan Dan Noodles. Fuschia Dunlop's recipe accurately mimics the dish found in the province of Sichuan, China.

    You will see that the recipe calls for 1 tablespoon of hot chili oil .... use your discretion and add more or reduce the amount you use to achieve the effect you want. Also Sichuan peppercorns are absolutely necessary to achieve the Ma La sensation in your mouth.
    Sichuan peppercorns are available from Penzey's on-line site or your local Asian market... but the best IMO are from Penzey's. Fresh and pungent.

        I would substitute Thai peppers for the cayenne pepper in this recipe.
