    Surly SOB, great product, particularly his housemade guanciale and pancetta.

    He won me over when he sold a veal breast to me and said, "Should I cut it up, or do you want to play with it?"

    Excellent quail too. If I have a complaint it's that he tacks on a charge for using a CC. Pay in cash.

      I love his sausages--great variety, all good. I used to get a stuffed rabbit from him too, just roast in the oven and serve. I don't know if he's still doing them because it's been a while.

        love that guy. I asked him for a pork butt once and he said to me "what are ya, a southerner?". I said, yes, I'm from NC.
        He proceeded to ask me for my pulled pork recipe, which I gave, and he wrote down on a piece of butcher paper.
        The sausages are the BEST though. Lots of fennel flavor in the sweet.

        Yea this guy is a trip. I used to buy ground bison meat from him. Super high quality, freshly ground, and half the price of Whole Foods. One time, after grinding the bison fresh and then wrapping it up for me, he took my money and gave me change without taking off his meat-covered gloves. I let it go since I knew the meat was fresh, and hey, its the 9th St Market.

          Everyone is talking about the butcher shop (which is indeed amazing), but when I first saw this, I thought you meant the restaurant. Do you mean the restaurant?
