What to do with whelks and huss?
I picked up a bag of whelks and a huge huss fillet at the Farmers Market this morning and, as I've never tried them before, I have no idea how best to prepare them. Any recipe ideas would be much appreciated.

Slice up the whelks and sautee in some butter and white wine and garnish with some pine nuts and lemon zest.
Or something a bit different, get some scallops, some meaty whitefish (maybe even your huss), and use the whelks to make a ceviche.
As to the huss, I'm pretty sure that you could make a good fish & chip out of it ...
