Does anyone have any tips on how best to dry fresh homemade pasta to use the next day? I have found that if you dry it too long it breaks very easy. and if you dont dry it long enough it sticks together!. also, if i make pasta the day before i need it, i dont refrigerate it as i found it changes colour to a dull greyish colour in the fridge- is it ok to leave it out of the fridge or should it be ok to put in the fridge if in an air tight container once it has dried a little? all help is much appreciated!! thanks!

Have you thought of freezing it? I have done this using a sheet pan and making sure it is floured well between 'layers' of the clumps of pasta ribbons. When ready to cook, just dump straight from the freezer into your boiling water. Regarding your pasta sticking together when not dried enough - if you add a bit of olive oil to your boiling water you should avoid this problem. Good luck!

Thanks Kasiav, I have a tiny freezer so i cant freeze it. i have heard that you dont have to put it into the fridge once it is dried - but am not sure. I am just looking for the best way of keeping and storing it overnight - without the use of a freezer, thanks for your help
