Your favorite cocoa to bake with..
I've been using Valrohna, dutch-process cocoa in my baking for some time and think it's great. But I've recently heard great things about Cocao Barry Extra Brute & Michel Cluizel cocoa powders.
Please let me know what experiences you have had with different cocoa's (baking) and which is your favorite.
Penzey's Dutch Process High Fat Cocoa Powder.
A Penzey's opened up a bus ride from my house and I am SO thrilled because now I don't have to pay S&H. I get all my dried spices and herbs from them except for vanilla extract (which is cheaper at my local restaurant supply house).
And it makes KILLER hot chocolate! (I never tried Penzey's Hot Chocolate Mix, though).
