My coworker is looking for the big slabs of chocolate... like placemat-sized or blocks of bulk chocolate. I remember Trader Joe's once sold broken hunks from a slab of Ghiradelli, but they don't carry it anymore. Any thoughts?
not sure what it's for or how much is needed, but TJ's has "Pound Plus" bars of repackaged Callebaut at a great price.
he/she could also check with some of these places:
or perhaps try to work something out with Chuao Chocolatier or the Ghirardelli shop in the Gaslamp district.
I usually buy my bulk chocolate at fresh and easy now, although trader joes carries chocolate too. The fresh and easy stuff is callebut and is delicious, I use lots of the dark chocolate and the milk chocolate.
The only place I've managed to find bulk white chocolate is eclipse sells white chocolate chips which are totally delicious. Please let me know if anyone knows of anywhere that does good white chocolate in bulk. The stuff in henrys is useful for making modelling chocolate but isnt really very good.
Whole Foods usually has bulk chocolate. I've seen Valrhona, Callebaut, El Rey, and a few others I cannot recall. Good luck!
