Xanthan gum in ice cream?

So I've had some issues with ice crystals in my ice cream, and as one of my experiments to try and get the texture right, I've turned to xanthan gum. Problem is, I've got no idea how to use the stuff, quantity-wise. Anybody have any experience using the stuff?

    Use 1/4 tsp. per quart of liquid ice cream base. Sprinkle the xanthan gum into the liquid while whisking.

      As an emulsifier, it's generally used at less than half a percent of total ingredients.
