If Fullerton in OC is not too far away, Steamer's Cafe is one of the best spots in southern CA for jazz. Drinks are ok, food is not...but the jazz is outstanding! Check out: http://www.steamersjazz.com/

Catalina Jazz Club comes to mind. The music is usually great and the food is on the "okay" side.
Cafe Club Fais DO-DO is another interesting spot in the Leimert Park area. They don't always play jazz, but they usually have a cool band playing and decent drinks.

re: ipsedixit
Nice recommendation ipsedixit. :)
I second that vote. It's a nice spot. For most Saturdays for this season (including your requested Saturday, June 6), Red White and Bluezz has:
* A Jazz Duo in the main dining room (more low-key), full bar and good dinner from ~6 p.m. - 9:30 p.m. or so.
* In the Back Dining Room and Bar, a rotating group of Jazz musicians (on June 6 it's a Jazz Quartet (I forgot their names, sorry), with Dinner seating at around 6:30 p.m. and they play sets starting at 7:15 -> 8:30 p.m. or so, and you can stay there till the end of the night, with a second Jazz session at 9:15 p.m. - 12:00 Midnight.
The Bar stays open until 2:00 a.m. (1:30 a.m. last call).
Here are some pics from my visit and thoughts on their dishes:

The first place that comes to mind right away is Vibrato up in the Glen off of Mulholland Dr. and Beverly Glen. While you can dine and drink here you can just drink and listen as well.

How late is late? You can't serve liquor after 2 AM. The Baked Potato has an 11:30 PM show.

One other thought. While we haven't been there is Spazio in Sherman Oaks. Anyone with experience here please chime in.

re: Schweinhaxen
Vibrato and Spazio are definitely on the fancy end. Down and dirty would be Baked Potato and, if you're in the mood for Blues, also Cozy's Bar & Grill. Spazio's jazz sets usually end on the early side (for my taste - midnight or so) but I believe the others go right up to the last call limit.

re: Schweinhaxen
For great, serious jazz, Charlie O's in Valley Glen (on Victory Blvd., just west of Woodman). Food is fine, not inspired, but music is wonderful; drinks are good. Old time intimate club which attracts all top jazz players in L.A. (often same line-up as Vibrato's for much less $). Last set is usually @ 11 or 11:30.
For jam sessions, you might want to check out The World Stage in Leimart Park. I've never been, but it's a historic, renowned jazz club noted among other things for its weekly jam sessions starting @ 9 & running till midnight or so (on Thursdays). I'm not sure what they offer in regards to food & drink, it's very well-known & loved in jazz circles for its musical offerings.-
