Wood Oven Baked Bread?

Just curious if there are any Bakeries in Southern Ontario, PEC to NOTL. Baking Wood-Oven Baked Breads???

    the best pizzas are wood oven baked...so i assume breads would rock also

        guess ill have to drive out to cobourg.

        Seems odd that no one else is doing this....does it not? being the "traditional" way of doing it and all.

          There is a wood fired oven open to the public on Sundays, 1-3 PM at Dufferin Grove Park. http://dufferinpark.ca/home/wiki/wiki...
          The set up is for D.I.Y. pizza, but you could ask two pieces of dough, form a boule or baguettes, let rise, and bake for 1/2 hour in a cooler part of the oven. Then enjoy with butter and honey...mmmm!

            Problem is that unlike pizza bread baking needs to be done in larger batches to make it worthwhile. you can put two pizzas in a wood fired oven and rotate then and and lay with them so they cook evenly for the few minutes it takes to cook. With 48 loaves of bread in the extended time they need to cook this is not feasible also moisture is a big issue with bread.. I am sure there are ways to do it but for the extra costs and the inconsistiencies that would occur I do not think commercially it is worth it.

              My suggestion was that the OP or any of us could make one or two loaves in a pleasant park setting on a Sunday afternoon. At $2.50 a pop, the risk is low.

          Any updates ? Any bakeries in Toronto using a wood fired oven ?

          In addition to MillStone in Cobourg already mentioned, my Google search came up with :

          1) Mary G's in Prince Albert Port Perry (but no address or location where their bread is available).
          2) Woodlot Restaurant in Toronto (mentioned on another thread by frogsteak) also sells bread.
          3) Grahame's Bakery in Kemptville near Ottawa.

            Humble Bread. I got them from Brickworks farmer's market.

              Haisai. A couple of different doughs, and they offer wood or regular oven. Singhampton, which might be a bit of a hike, but if you're up there have lunch. Bakery open Saturday, Sundays.
