Looking for carrot cake recipe with less sugar and more sweet carrots, pineapple etc

Does anyone know where I can find a carrot cake recipe that relies more on the ingredients to sweeten the cake than a lot of sugar?

I love lots of carrots and pineapple in it!

        No, though I would think you could add pineapple to that recipe. I haven't actually tried that recipe -- just thought I'd pass it along.

    2. Sometimes I'll substitute apple sauce for butter or oil. Usually it's to placate my vegan buddies but it does add a natural sweetness and keeps cake SUPER moist. Just be sure you get an applesauce with a lower sugar content. You might also just use honey, which won't give you such a "cloying" sweet flavor.

      1. This is not a traditional carrot cake but is so yummy (and healthy!). It is a Harvest Cake With Cider-Cinnamon Cream Cheese Frosting and has carrots, parsnip, zucchini, and apple and only 1 cup of sugar & 1/4-1/2 cup oil in the cake itself.           Wow! I will have to remember that for fall, when I get all of those things in my CSA box and can never think of what to do with them!

        2. If anyone is interested, I found this recipe (and it was exactly what I wanted!)

          1/2 cup chopped nuts (optional)
          3 large eggs OR 3/4 cup egg substitute
          1/2 cup Extra Light Olive Oil OR Canola Oil* (see note below)
          1/2 cup granulated sugar
          1 (8-ounce) can juice-packed crushed pineapple
          1 cup whole-wheat flour
          1 cup all-purpose flour
          1 tsp. baking powder
          2 tsp. baking soda
          1 tsp. ground cinnamon
          1/2 tsp. ground nutmeg
          1 tsp. vanilla extract
          3 cups (1-pound package) carrots or 1 pound baby carrots, grated
          1/2 cup raisins (optional)
          Light Cream Cheese Frosting (see recipe below)
          Chopped nuts (optional)

            Just an FYI, I regularly decrease the amount of sugar in recipes without damage, but for your recipe at 1/2 cup, I'd probably leave it. I've also done the crushed pineapple, and I drain off some, but not all of the liquid to keep it moist.

            Another thing I've done is to add grated zucchini, which also adds a lot of moisture.
