Help, I need to figure out what to make for tonight.

I have a limited budget and small means, currently I have no cash to spend. What I'd like to do is make something with the ingredients I currently have.

I have:
-Chicken Thighs
-Corn on the cob
-Eggplant
--Dried mushrooms (Porcini, Oyster, Shiitake.)
---Beef broth
--Chicken Broth
---Rice (white and brown)
--Couscous
-Canned black beans
-Vinegar
-A WIDE variety of spices but no tarragon.
-An onion (I think)

What do you recommend?

      Do you plan to use an outside grill or cook inside?

    2. You could do a chicken tagine using the thighs, the chicken broth, couscous, eggplant, mushrooms, beans and spices.

      1. Brine the thighs for an hour in 1-2 TBSP salt per quart of water in a zip top bag. In another ziptop bag place finger-thick slices of eggplant and brine it for the same time.

        Remove everything from the brines. Dust with Chili powder & cumin; or Garam Masala if curry flavor sounds better. While the corn water is heating, grill the meat and first veg. Ore pan fry if you must. Drop the corn in boiling water for no more than a minute or two - to heat through.

        Plate & serve.

        Absolutely need a starch? Cook your couscous in the Chicken broth.
