espresso substitions

can i sub instant espresso granules in a cookie recipe that calls for ground espresso beans?
if not, any recs for cookies with instant espresso?

I think that would work just fine. The instant may "dissolve" into the batter, depending on how wet it is, but the taste should be fine. Could you just use very finely ground coffee?
