Road Trip Suggestions needed
Here are a few suggested places along your route.
Rein's Deli, Vernon Ct - Good place to grab a bite to eat as you are driving along rt. 84. I don't think it's worth a trip by itself but if you are in the area and hungry it's a good place to rest.

Shinn Vineyards, North Fork LI: This is our favorite winery on LI. It's also close to impossible to buy their wine anywhere but LI or NYC. Worth the trip.

If I might make a route suggestion? In Mystic, instead of getting back on I-95, consider taking Route 1 to Rhode Island. Much more scenic (although of course, longer drive time). If time is of the essence, take I-95 to Westerly, RI and using google mapping, find the way to connect to Route 1. Rte 1 is a 4 lane highway after Westerly (so just as quick as I-95) and goes past many turnoffs for RI beaches. Matunuck Beach area is charming and Misquamicut Beach (south of Westerly) is great fun with plenty to do. Charlestown has some great beaches also. Route 1 will take you right to Rte 138 east for Newport. I would not suggest I-95 to Rte 138 - 138 is a 2 lane and just not much to look at. Can get slow if you're stuck behind someone. ;-)
I see that you're driving through the North Fork of LI. You should search the boards here for lots and lots of North Fork tips from Greenport, to Southhold, Cutchogue and Mattituck through Jamesport and Aquebogue. This is the wine country of LI and there are tons of great wineries, farm stands and other spots that you can stop at. IMO the best restaurant is North Fork Inn and Table, which you should try to arrange a meal at while you're driving through Southold.
