Picnic Menu Help

I am looking to add a chilled or room temp main course (protein) to a picnic menu. We will be bringing a portable grill but it is small. I am grilling one main dish but need to be able to prepare the other at home.

We're having Korean bbq wrapped in lettuce along with rice and banchan. Also a huge fruit salad. The second main course can be anything and I can make sides to go with it. It doesn't have to relate to the other food. I will probably also make a big tray of humus, baba ganoush, pita, olives, roasted peppers, etc... to set out when we arrive.

    My though it a steak or chicken wasn't sure on your BBQ, steak or chicken or seafood. So I would use something different but make a pasta dish. It can be room temp but with lots of fresh ingredients. Use a whole wheat pasta, rice if you want and toss. A great salad and hearty. Even the steak or chicken over some toasted bread would be great but I would go with the pasta for ease. Room temp is great. You could always take the protein in one tin and pasta in another and heat and mix but I would be happy just without heating.

      I'm doing beef bbq so a room temp chicken/pasta recipe would be great!

        I will send you a light summer one, has snow peas, red pepper and a light vinaigrette not do many competing flavor, light and summery. I will be home in a couple of hours and send to you.

      Raspberry/balsamic marinated grilled chicken breasts.

        frittata with asparagus and mushrooms or asparagus and roasted red peppers.
