Made Chewy Choc chip cookies, not chewy enough!

I use the Alton Brown chewy chocolate chip cookie recipe and for some reason the cookies never turn out chewy enough. They are good, but not great.

What recipe do you use that makes very chewy cookies?

  1. This Alice Medrich recipe I found on the Scharffen Berger site ALWAYS comes out chewy. Think melting the butter might be part of reason -- only recipe I've ever used that calls for this:

    1. Bread flour mixed with cake flour and more brown sugar. More gluten makes it chewier but too much makes it tough so the cake flour cuts that. Try the NYT/Jacques Torres recipe. It's worth the effort.

      For something simpler Cooks Illustrated Best Recipe Big and Chewy cookies are good, too. Not quite as good as NYT but still excellent.
