The zest goes on waxed paper squares in more or less 1T. piles, squares get folded, then packets go into heavy duty freezer bag. The squeezed shells are also frozen and used in roasted chickens, or whatever. I also make and freeze lemon sugar - just toss about 1 tsp lemon zest per cup of sugar in the food processor and give it a whirl, bag and freeze for baking or sprinkling..
