        <content>I'm making a bunch of lemonade and don't want to waste the bonanza of lemon zest.  Have you ever frozen it?</content>

      <content>Den, yes, I do this whenever I use a lemon or any citrus, for that matter. I zest first, then cut and squeeze for the juice. The zest goes on waxed paper squares in more or less 1T. piles, squares get folded, then packets go into heavy duty freezer bag. The squeezed shells are also frozen and used in roasted chickens, or whatever.

      <content>I'm a bit lazier and just put the zest in a little baggie and freeze with great success. I also make and freeze lemon sugar - just toss  about 1 tsp lemon zest per cup of sugar in the food processor and give it a whirl, bag and freeze for baking or sprinkling..</content>
