Making barbacoa at home

Not barbecue...Mexican barbacoa (a.k.a. cow's head). Have any of you attempted this before? I'm encouraged by Robb Walsh's video on the topic here:

    I am a few weeks from trying one of the recipes included....

    1. Cooking a cow's head sort of creeps me out. I have recommended the other Barbacoa recipe that Robb posted awhile back that was made with lamb.


      Even so, I really do like Barbacoa! Very good - I just don't ask what it is made of ;-)
