Bumper Crop of Cilantro!

Just got back from a week vacation and the cilantro on my deck exploded while I was away. Other than using it for guacamole (the usual) or a flavoring agent is there a recipe which uses a large amount of it? More like an entire bunch at a time? I just literally picked a huge fistfull of it and have plenty more to spare so I'd love to be able to make something which will really feature it as the main ingredient of the dish, not a backdrop.

          Much like kudzu except kudzu tastes good.

            Thanks for that link. I was away last week, so never saw that. Chimichurri for grilling some kind of meat, particularly lamb, sounds like a good idea right now.

            Oh and Grampart, obviously I think cilantro tastes great, or I would not have asked for recipes!
