Bumper Crop of Cilantro!
Just got back from a week vacation and the cilantro on my deck exploded while I was away. Other than using it for guacamole (the usual) or a flavoring agent is there a recipe which uses a large amount of it? More like an entire bunch at a time? I just literally picked a huge fistfull of it and have plenty more to spare so I'd love to be able to make something which will really feature it as the main ingredient of the dish, not a backdrop.
