Amsterdam recommendations for someone living in Paris
I will be travelling to Amsterdam with a Parisien and would like to get some ideas as to where/what to eat that my friend would also 'enjoy'. For example I've read good things about Da Kas and De Witte Uyl and would love to try them, but my only worry is whether they're similar to the gastro-bistro/restaurants that are relatively easy to find in Paris? I guess we prefer to avoid French or heavily French influenced cooking ... Perhaps we should stick with traditional Dutch cuisine? If so, what are some nice places to best experience it? Thanks!
You're spot on with De Kas and De Witte Uyl!
People often ask about typical Dutch food and I usually recommend against it. People on a quest for local food typically end up going for an Indonesian Rijsttafel or pancakes. Both are nothing special.
De Kas and De Witte Uyl, while serving French cuisine, will be sufficiently special to not disappoint a Parisien. De Kas is situated in a former greenhouse in the middle of a park and you can touch and smell the herbs in between courses. And De Witte Uyl has an interesting setup where you choose two dishes from a menu of 16 in any order you wish. Both focus on local produce and combine French and Asian dishes with local ingredients.

All the fancy/nice food to eat in Amsterdam seems to be French-influenced at least. There's not really a "Dutch" cuisine tradition that has produced great restos, as far as I can tell. For the "Dutch" experience, have lunch in some of the little cafes and order a tosti (sort of a grilled cheese sandwich) and koffie verkeerd (a little bit like a latte). When we first visited, we found the recommendations of dutchgrub to be excellent advice. We particularly have liked Balthazar's Keuken and Cafe Loetje.
