Got some ramps. Now what?

I impulsively bought some ramps. Now what should I make with them?

    I just made them sauteed in a simple brown butter, salt and pepper the other day, they were great! I'm thinking as a raw sandwich addition they would rock too, the greens are so tender. And maybe in a caesar salad too, mmm

      Thanks guys. I ended up sauteeing them with a little fresh spinach.

      Ramps are my new fave vegetable. Must go back to the market and get more!!

          I bought ramps at the Greenmarket last week, and the woman who sold them to me gave me a great recipe. Basically, roast fingerling potatoes with olive oil, salt, and pepper. A minute or two before the potatoes are done, toss in pieces of the ramps. Return to the oven just to wilt the ramps.

          I served the potatoes with pepper crusted steaks, roasted grape tomatoes, and sunchokes.
