Gluten Free Alfajores Recipe?

Has anyone gone all the way and tried eliminating the wheat flour entirely from this South American dulche de leche sandwich cookie (the pastry part is usually cornstarch-based)?

  1. Hi there. There are some recipes for traditional Argentinian 'alfajores de maicena' made with cornstarch and rice flour. Here is one I found online which looks really good:


    * 3 egg yolks
    * 50 gr of butter
    * 50 gr icing sugar
    * 150 gr cornstarch
    * 20 gr rice flour
    * pinch of yeast or baking powder
    * pinch of salt
    * dulce de leche
    * grated coconut


    Mix butter and sugar. Add egg yolks and cream together.
    Add sieved rice flour and cornstarch, salt and yeast or baking powder.
    Knead ell until ll the ingredients are blended together and let it rest for 15 minutes in the fridge.
    Roll over floured surface until the dough is about 1/2 cm thick. Cut in circles of approximately 3cm each and bake for 5 minutes at 160ÂșC until lightly broned.

    Let them cool and fill with lots of dulce de leche, covering the sides with grated coconut.
