ISO Jumbo Lump Crab Cake recipe from J Gilbert's Wood-Fired Steaks
I've been googling around looking for a lump crab cake recipe that sounds similar. I'll share what I've found, but am not sure any of these is quite it.
Here is the description from the menu at J Gilbert's:
"Maryland style crab cakes. Taos tortilla mix with honey lemon dressing and house made pico mayonnaise"
From searching, I saw one other restaurant that had the exact same description for the crab cakes:
http://knottypinedining.com/
Since both menu descriptions use the *exact same verbiage* to describe the crab cakes, I'm guessing they're made elsewhere and sold to restaurants...which is fine, I'd just like to figure out how to make them.
Is "Taos tortilla mix" just a blend of chili spice seasonings?
If push comes to shove, I will just keep experimenting and see what I come up with. Seems making crab cakes is not unlike making meatloaf (egg, breadcrumbs or bread, seasoning), so I'm sure I can come up with something that makes me happy. But if I could make them as they do at J Gilbert's, I'd be ecstatic!
The Ruth's Chris recipe on this link sounds like a good starting point (using less breadcrumbs, adding chili spices):

Any advice?

Hi again! Anybody have any feedback on any of my questions above? I'm looking for a killer jumbo lump crab cake recipe and wonder if any of you have one that sounds like what I've described.
I may just stick to ordering them out. I'm going to J Gilbert's tomorrow, so I'll see what I can figure out from there. But if anyone has insight, I'd love to hear!

re: kattyeyes
I've worked at J. Gilbert's for over 5 years and NO we DO NOT buy our crabcakes elsewhere, everything is made fresh every day in house! Taos tortilla mix is just a mix of julienne carrots, red onions, and red and green bell peppers, and that mix is used solely as a garnish on the plate, its has nothing to do with the crabcakes themselves which are oven baked and 99% jumbo lump crabmeat with a lil old bay seasoning, mayonaise, and breadcrumbs
