        <content>Hi CH'ers,
I'm appealing to your great depth of knowledge and taste, and asking for your input regarding cookbooks, or publications that focus on "makeover meals"-in the line of the new Cook Yourself Thin series on the  Lifetime Channel.

For instance, how to cut calories and fat from some of  your favorite dishes so that they can be enjoyed more often than an occasional indugence because you have made them over to be  truly in line with healthy eating. Things like lasagna, alfredo, cream sauces and soups, etc.

      <content>Cooking Light magazine has a "makeover" every issue; only one though. But it's usually some sort of family favorite that is loaded with butter and sugar and sourcream and cheese or such, and they remake it. Always supposedly "even better"  :)</content>

      <content>Looking at my bookshelf now.. I have one called "Calorie Countdown Cookbook" by Juan Carlos Cruz. He used to be on the Food Network, and was rather irritating, but I liked his recipes so I bought the book. I've made several recipes from it and enjoyed them. 

I also have one titled " Kosher by Design LIghtens Up." I really like this book, and made a bunch of recipes from it. </content>

      <content>I *do* remember him-wore cammies alot, right? He sure was fit, though! I also liked the low-carb guy..George....?? Anyway, I thought his story (and his entire family!) was amazing.</content>

      <content>George Stella- "Low Carb and Loving It!"-just googled it. He may have featured bacon a lot, but, MY GOSH, what a transformation, and it appears it's still working!

      <content>Now I can't vouch for the accompanying cookbook since I've never read it, but I remember Graham Kerr (aka The Galloping Gourmet) used to have a PBS cooking show which took recipes and reworked them to be healthier and less fatty.  He would have a chart comparison at the end of the episode to show how many calories were cut, how much sodium content was lowered, etc.  Anyway, there is a cookbook from that show so maybe there are some good recipes in there that show before &amp; after?

I used to love watching reruns of The Galloping Gourmet as a kid.  I thought he was a lot of fun (didn't quite clue in to the wine in his glass at that age!).</content>

      <content>Ha! I remember him jumping over an ottoman? with a glass of wine in his hands. He really made a turn-around with his healthier show.</content>
