BT 20 - Bobby Trigg's New Restaurant in Princeton
There has been a lot of speculation about when Bobby Trigg's renovation of The Peacock Inn (and its restaurant, BT 20) in Princeton would be finished.
According to the following link, "the property" will open on May 15. I'm not sure if this also means that the restaurant will open on that date since Trigg has been quoted elsewhere as saying that he would probably open the hotel and bar first.
Anyone have additional information?

I drove by this week and the sign outside said The Peacock Inn is now open, however, as of 2/19/2010, they have an add on Craigslist for job openings which states they are looking to open the restaurant in the "near future". The list of job openings does not include an Executive Chef, so I assume someone has already been tapped to fill this position.

The bar is open as well as the hotel. From what I heard, it was truly a 'money pit' situation as described above between Bobby and his partner Barry Sussman. The shortages led to a 'culinary divorce' between the two and Bobby has been forced out. I've heard a few names thrown around for the Exec job including Craig Shelton and Dennis Foy... Fingers crossed for them, we could use another great restaurant in this area.

Well, here we are almost one year later and I guess the title of this thread should now say "NOT Bobby Trigg's New Restaurant in Princeton".
I just read the following on one of the New Jersey Monthly blogs.
"The Peacock Inn bar, 20 Bayard Ln, Princeton (609-924-1707), is now open from 5 PM, but the restaurant has not yet opened. The original chef/partner, Bobby Trigg (of the Ferry House and BT Bistro), is no longer involved with this undertaking."
Does anyone have the back story on this? It does seem that the restaurant in the renovated Peacock Inn will open but I'm wondering who the executive chef will be.

Chef Trigg was out a few weeks ago. The Peacock is in talks with "top level chefs" to take over the restaurant. I think Bobby got into a big money pit with the 6 yr renovation of the Peacock and with opening the BT Bistro may have spread himself a bit too thin. Probably a good thing for all involved that he's out and can focus on the other two. We wish him well and look forward to further news on who will be in the Peacock's kitchen.
