Ya know there is a fine book I think would be ideal: Sauces - Classical and Contemporary Sauce Making by James Peterson. I am not sure it is in print anymore.
If your chef has not learned the baking side of the house I recommend: http://www.amazon.com/Professional-Ba.... You could buy it used pretty inexpensively. I think I saw 18 bucks.
On top you could wrap it with good wooden spoons or a silicone coated whisk -LOVE THOSE!
