How to make those pickled sliced jalapeno's in asian reaturants

I just got back from a trip to Singapore and they had pickled sliced peppers and they were soooooo crispy and yummy. I have searched high and low and can't seem to find a recipe. Is they called something?

Than this past weekend we went to a Vietnamese/Chinese restaurant in San Francisco and they had pickled sliced jalapeno's. They were pretty good. Now I have an obsession of trying to remake it to have at home.

Anyone tried this before? Is there a recipe online or one you care to pass on? If I make it, how do I have them stay crispy? Hopefully somewhere here knows what I am talking about. I am so suprised I can't find anything online.

    I've made Vietnamese pickled shallots that were terrific. I would think the recipe could be adapted for jalapenos. Also is in this thread is a recipe for Korean pickled garlic that might work for you.

      The pickled shallots recipe should be exactly right for what the OP is looking for. Add sliced garlic for a bit of variety, but otherwise, the brine and sliced peppers are exactly it.

        ooooh pickled shallots. I am vietnamese but can't say I have ever had that. Maybe I should make that too since I am already gonna try pickled jalapeno's. Thanks!
