I have to second Blue Bottle Cafe. It is excellent, and probably quite nice to dine at in the spring, even if they don't have outdoor dining. Brothers Moon, also in Hopewell, is another wonderful option, though I believe it comes in second to Blue Bottle. If you want actually IN Princeton, I don't have any recs because I tend to avoid eating in at the more upscale restaurants. I know that if you like seafood, my mother would second the Blue Point Grille enthusiastically.

if you like seafood and don't mind bringing your own bottle, my recommendation is blue pointe grill.
