ISO beefy tasting beef.

I love eating the occasional ribeye steak but I can't find one that actually has a full beefy taste. Lately, I've been buying them at Costco which is labelled as triple A - good marbling but quite bland in flavour. I've read about wet and dry aged beef which, especially dry aged, apparently are more beefy tasting, but I don't know where to buy them.

Any leads?

    We've gotten some really great steaks at Chez Vito. A little pricy, but very tasty. We got an amazing cut of beef for Bistecca alla Fiorentino there, and when grilled on charcoal, it is heavenly.

      where is chez vito ?

      we've been living in Dallas half the time and will be till december and I'm spoiled with the superb taste of their beef, why can't we get anything like that.

        Chez Vito is at the corner of St. Urbain and Fairmount. They are a very excellent butcher shop, as I said, a little pricy, but the meat is very good and the service is excellent. I often go in there with odd requests, and they are fabulous. Closed on Sundays and MOndays.

      I bought some steaks a while back at les 5 saisons on Greene, and I have to tell you, it was one of the darndest best steaks I ever had.

        Try one of the butchers discussed recently on this list - Boucherie de Paris and Charcuterie de Tours (Atwater Market) are two that come to mind. I know there are more...
