For all the talk about buckwheat pancakes I've been hearing of late, I've found relatively few recipes for them. Do you have a favorite recipe?
And never, never use that corn syrup crap. Real maple syrup or sugar or honey or just butter or jam or whatever, but Mrs. Butterworth and her minions are evil.
My Favorite Buckwheat Pancakes
1-1/2 c. pastry flour1/2 c. buckwheat flour1/2 t. salt1 t. baking soda1 t. baking powder2 T. malt powder1 beaten egg1/4 c. melted butter2 c. buttermilk (you may need less; pour half in and work from there)
Do you use the same malt powder one would use if making malted milk?
There's a buckwheat buzz? Old-fashioned breakfast variety or hors d'oeurves blini?Or something in between?
