ISO: Gluten free Peanut Butter Cookie recipe

Our daughter is getting married in July and she is a imaginative and adventurous cook, but she also loves some of the old-time favourites. She is also severely gluten-intolerant and allergic to corn and corn by-products.

A group of our pals who have watched her grow up are preparing a cookbook especially for her. She developed the allergies in the last few years so we want to include a bunch of dishes that she loved as a kid, but needs to have 'adpated' now.

We have found (and adapted/tested and photographed) carrot cake, apple crisp, mac and cheese, fish sticks, stuffed turkey and gravy, chocolate silk and pumpkin pie, spaghetti and meatballs...but she used to love her Nana's Peanut Butter Cookies and those we have NOT been able to replicate.

Anybody got a good recipe for the old-fashioned kind, soft and chewy with the fork criss-crosses on top, but gluten free? (We are blessed in that we do have access to all the oddball ingredients that GF lifestyles demand: xanthum gum and tapioca flour and all the rest!)

        Why, thank you, Scarlet and thanks to all...we are having a good time with this...way more fun as an activity/gift than those dreadful events my crowd went in for 30 years ago...I actually have photos of otherwise totally responsible women sitting with inverted paper-plates laden with bows on their embarrassed heads...surrounded by elderly aunts all looking as if they'd rather be any place than sitting in a circle "oohing" and "ahing" over plastic salad spinners and tea towels.

        Heres to new ways of doing things!

              I used this one after surgery when I had to watch carb intake

              Peanut Butter Cookies
              1 egg
              1 cup sugar
              1 cup peanut butter

              Directions:

              Combine all ingredients until mixed. Roll mixture into 1 inch balls. Place on ungreased cookie sheet and flatten each ball with a fork. Bake at 350F for 8-10 minutes. Cool for 5-7 minutes then place on wire rack.

                This is without a doubt the best peanut butter cookie recipe. I use brown sugar instead of white and add a cup of chocolate chips. I have also seen this recipe call for 1 teaspoon of vanilla and 1 teaspoon of baking powder.

                  Yes, include the baking powder. Helps a bit more with the heft. But these are great - just make them small, because they do fall apart, they're so moist.

                My standard GF cookie mix for chewy cookies is: 2 ounces sweet rice flour, 1 ounce tapioca flour, 3 ounces sorghum/millet, ½ ounce almond meal, 2 ounces potato starch, 2.5 teaspoons xanthan gum. The key is lots of xanthan and sweet rice flour. I sometimes mix with a more all-purpose mix, for less chew.

                  Paula Deen has a recipe that she calls "healthy." It's gluten free as written. I can look for it if you're interested.
