Hog Wash - mignonette
How do you eat your oysters raw?
We met in Marshall yesterday for 50 kumamotos and 50 sweetwater oysters at Hog Island + fresh breads from Thorough Bread Bakery and French butter with Champagnes and Muscadet and Meyer Lemons + Good Company + Fine Weather
Hog Wash mignonette - makes one cup
1/2 cup unseasoned rice vinegar
1/2 cup seasoned rice vinegar
juice of two limes
1 shallot, minced
1 serrano chile, minced
1/4 tsp. grated fresh ginger root
2 Tbl. chopped cilantro
1/4 tsp. kosher salt
Raspberry Mignonette
1 cup red raspberry vinegar
1 shallot, minced
juice of one lemon
pinch of kosher salt
dash of freshly ground black pepper
Grilled Oyster Sauce
1 cup unsalted butter, melted
10 garlic cloves, minced
2 anchovy fillets, mashed
2 Tablespoons of Tabasco or any hot sauce
6 grilled oysters
