If you are willing to pay around Yen20,000 per person for high end sushi, those that have been highly recommended here : Sushi Mizutani, Sukiyabashi Jiro, Sushi Kanesaka, Sushi Saitou, Dai San Harumi, Taku, Kyubei, Sawada (even more expensive, be ready to pay 30-35k).

Sushi Kanesaka gets my vote. Brilliant knifework, sushi-friendly rice, and superbly fresh offerings. Be ready to pay 27500yen per person (or above).

My situation, too, until 2 weeks ago. I can highly recommend Ginza Kyubei and Sushi Mizutani. You can't get Ginza Sukiyabashi Jiro unless you speak Japanese, and the Roppongi branch was excessively pricey at $100pp more than the others. I'd strongly suggest RyuGin (Roppongi) for a modern kaiseki like no other.
