Is there anyone doing this in Phoenix? I know there are elements on menu's at a variety of restaurants in town (including Binkleys in particular).

I love the idea of transforming food into something unusual, and am interested in exploring Molecular Gastronomy more. If anyone has any ideas on where this is happening in the valley, I would love to know.
