ISO 2 pesach recipes

Hi - I need 2 diff recipes
1. Short rib recipe to make in crockpot for Shabboslunch
2. My DH is requsting duck for Fri. night of Pesach - Don't know how to make duck!

  1. Shortribs; Never made in a crockpot, but I assume it's doable. I salt and pepper then sear both sides of the meat. Take it out. Chop up carrots, onions, celery and garlic. Saute until soft. Add ribs. Cover with bbq sauce (your choice), then pour a quart of chicken or beef stock over the whole thing and simmer covered for 4 hrs. That's my on-the-stove recipe...I'm not a crock pot person.
    Duck; slit the skin through the fat layer. Salt, pepper, garlic, paprika...roast it like a chicken! Remember that there isn't much meat on a duck. You will need about 1/2 a duck per person!

      You can steam the duck for 30 minutes to get rid of some of the fat, or raise it above the level of the pan so that more fat has a chance to drain off during roasting. One way to do so is make a rectangle of celery stalks for it to sit on. You use toothpicks to keep the celery pinned together at the corners. It is really different than roasting a chicken in the sense of the amount of fat that is going to be released, so I would advise steaming it first, especially if you are cooking it for the first time.

    2. My wife smoked some shortribs then cooked them into a black bean cholent/stew in the crockpot a couple of Shabboses ago. Best ever. The meat was amazingly tender and the smoky flavor was incredible. Hard to find a substitute for black beans for Pesach.

      1. It's probably too late for my reply to you, but America's Test Kitchen just did a crockpot shortrib recipe - I DVR'd it! Lots of prep, but not too complex. Skip the bacon.
