Best intestines preparation?

I'm totally craving pig's intestines at the moment, I'm looking for suggestions on the restaurants with the tastiest preparations, from any cuisine. Menudo? Chinese styles? Etc.

Thanks!

  1. Go Go Cafe has several chitterling preparations on their menu.

BTW isn't menudo usually cow stomach?

I think you're right about menudo.

I have a couple of votes for best intestines -- there's the tripas tacos at El Novillo taco truck, and the fire-bursted intestines at China Village.

I think you are right, I still need to try menudo, whatever is included in the prep.

      2. If intestines other than pig will do, occasionally Kokari will sometimes serve Kokoretsi , which is made of lamb intestines and other ofal, skewered and roasted on the spit. It seems to appear on the menu every couple of months.

        1. And if you'll take any other innards there is always haggis available from Scottish Meat Pie, Dixon.

How is the haggis there? Is it worth the trip out to Dixon? My boyfriend is Scottish and his birthday is coming up, so finding a place serving haggis sounds like a great birthday idea.

As I remember from the posts that come out each year around Bobby Burns' birthday the consensus is it is excellent.

That sounds like it will hit the spot! I'll definitely add that to my list, thanks!

            2. Spices on Clement for Pork intestine and Pork blood casserole. Intensely spicy and salty.

Do you have a preference between Spices I and II? I've heard they also serve stinky tofu?

                1. re: luckytomato

I've actually only been to the one on 6th Ave, and I think only one of the two does stinky tofu.

                    At least in 2007.

              2. At China First, on Clement, I always order the pork intestine with pickled vegetable. It is listed on the whiteboard, not on the regular menu. They also have a deep-fried version.

For a totally different animal, you could try the stewed beef intestine, offered at some of the Cantonese places. It is usually a component of a mixed stew of beef innards.
I like the version at New Gold Medal in Oakland.

I've had pork intestines with pickled vegetables before, though not at China First, I remember that being quite a good preparation. I'm going to have to go on a intestines crawl.

                2. Try to find some room for pork butter from Boccalone. Not intestines but other pork goodness

                  1. re: wolfe

What exactly is pork butter? I am intrigued!

                      As described by RL.

Yum! If I wasn't already cooking with the fat from making duck confit, I would run out and get some of this pork butter.

                  2. The best I've ever had was in Granada, a chick pea and offal stew with a lot of tripe in it. I don't know why the tapas and Spanish places here don't serve more innards, it's very disappointing. It's even hard to find good morcilla.

                      That sounds like callos.
