Why do I get black marks on half sheet pan?

I've been getting impossible to clean black marks. I've tried bar keeper's friend and it just moves the black around.

    1. Does it affect performance? Probably not. In other words, spend time talking to mom, playing with the kids, or enjoying a sunny day. People sometime freak the hell out when they see things like what you're describing but in reality it's nothing to worry about.

          But the pan is dirty. I try to clean it and the black marks turn to streaks and just move around. Maybe I'll try vinegar and baking soda.

              What are these mysterious black marks? If the pan is dirty, then wash it. Use soap. If it's burned on grease or bits of food, put the pan on the counter fill it with hot water and dish soap, and let it sit overnight. Scrub with a regular scrubby sponge and you're good to go.

                  Scrubbing with dishwashing soap, with bar keeper's friend, did not work. I tried the white vinegar and baking soda and it cleaned right up; I still don't know what caused the problem.

                      What is the black stuff?
                      What kind of pan is this?
                      Aluminum?
                      Stainless?
                      Non-stick?
                      What did you cook in the pan?
                      Cookies?
                      Roast chicken?
                      Did you cover it in aluminum foil?
                      Did you use a Silpat?
                      Did you cover it in parchment paper?
                      Is the black stuff greasy?
                      Is the black stuff powdery?

                      Can you provide any other details about why this pan turned out like this?

                          I don't know what the black stuff is, only started happening recently. Rubs off sorta like tarnish on silver.
                          I think I might have put it in dishwasher, maybe that's not good.
                          I think it's aluminum, those half sheet pans you buy at restaurant supply houses.
                          It is not non-stick.
                          I heated up TJ's chicken sticks (those rolled up things).
                          No foil. Maybe problem started in the past when I sprayed with Pam.
                          Greasy black stuff.
                          I'm just glad the vinegar/baking soda worked.

                              Theeeeere we go! See, all you needed to say was it was aluminum and you put it in the dishwasher. If that is truly the case, if it is truly untreated aluminum and you dropped it in the dishwasher it would be quite obvious what has happened... and something tells me you're selectively leaving out the details here. ;-)

                              Aluminum in the dishwasher spells disaster. You will get a nasty black oxidation all over the outside that is exactly like what you've just mentioned - it's kind of like tarnish but powdery. The Pam may have made it greasy? If it all comes off, great. Just don't put it in the dishwasher again. Untreated aluminum, hell, even anodized aluminum in the dishwasher = ruined.

                                  I wonder why I never knew that. I don't have much dishwasher experience, since 92 had one that didn't work, finally bought a new Miele dishwasher last Dec when I was forced to buy a new refrigerator.

                                  What kind of half sheet pans can safely go in the dishwasher?

                                      17 years with an empty, unworkable dishwasher, huh? Oh well, just chalk it up to waiting for technology to improve. ;-)

                                      Most things CAN go in the dishwasher, unfortunately aluminum isn't one of them. It's not like just because it's a sheet pan that it can't go in the dishwasher, it's simply a matter of what kind of metal can or can't go in the dishwasher. If you get a stainless half sheet pan, those work just fine in the dishwasher. I wouldn't suggest going the non-stick route - they tend to be cheap and the coating wears off real fast. So... stainless is probably the best answer there.

                                      Anodized aluminum (like the original Calphalon pans) can't go in the dishwasher either. The detergent literally strips off the anodized coating. Not cool. Avoid placing nice stemware (wine glasses) in there, the jostling will invariably break them. No wooden items; boards, spoons. And of all things, please, PLEASE don't put your good kitchen knives in the dishwasher. It's not a good place for them. Don't put in any cast iron or carbon steel items like pans or knives (but we already discussed knives, right?!).

                                      Things that rust + aluminum = no dishwasher.

                                      No wood.

                                      P.S. the rinse aid is a good thing to keep filled up in your dishwasher as well. You know, the Jet Dry stuff.

                          I put my aluminum half sheet pans from the restaurant supply house into the DW on a regular basis and have no trouble with them. Don't have problems with aluminum restaurant supply pots or other pieces that I run through the DW either. Never put anodized in there because DW detergent will take the finish off.
                          Perhaps your water has a very high alkali level but I can't imagine why the "black marks" would "move around."
