Richmond: Sazon - the barbacoa crawl part 2
The lamb barbacoa at Sazon is only served on Sunday. The $15 price includes
- a large cup of lamb consome with chickpeas
- three large, thick house-made corn tortillas
- 1 lb of roasted (?) lamb
- refried beans
- Mexican rice
- little cup of salsa (choice of medium or hot0
- a baggie of chopped onions, cilantro, dried skinny red peppers, 2 lime halves
Everything was good, but Mom's Cuisine in San Pablo is the more complex version ... though for me it is hard to dismiss any well-made lamb.
The lamb at Sazon had nice pieces of fat in it and it was very tender and tasty. Mom's, however, included a few bones to chew on as well and was a little more refined preparation.
The consume at Sazon was pretty straight-forward ... red consume, a few chickpeas and a little smokiness. Mom's is by far the winner here, richer, more complex, fragrant with herbs, lots of rice and chickpeas.
Sazon makes their own corn tortillas on the weekend. These are large and thick and almost big enough to make a burrito. While they are excellent, for this dish they didn't invite making tacos as the smaller and more delicate tortillas at Mom's.
The red salsa is good and spicy ... but here again, the green salsa at Mom's seemed taylored specifically for the lamb. The salsa fresca made for a more interesting taco than just onions and cilantro at Sazon. I wasn't sure what to do with the dried peppers, so they are sitting in the remaining consome in the fridge.
The refried beans were a nice version and the Mexican rice was respectable.
Both are very tasty, but as far as this dish, Mom's wins

To tie things up, Mom's is the out and out winner of the barbacoa crawl for both lamb and consomme
Sazon had the next best lamb and finished last for consomme
Nopalito has a very rich and deeply flavored consome, so came in second there. However the lamb was fat-free and not as tender or flavorful as Mom's or Sazon
