I'm guessing that finding poutine in New York is difficult as it is, but would there be a place that makes it with a vegetarian gravy?
Yes! One place that I know of: Curly's Vegetarian Lunch on 14th between 1st and 2nd. They call it Disco Fries, which is the local term (or so I've been told).
Dive Bar (96th & Amsterdam) serves a non-meat version of poutine. Instead of meat gravy they use mushroom gravy. They do carry both versions, so be sure to specify which you want.
