Thanks for the responses so far. I will use a mixture of all. I have yet to learn to appreciate the quinoa, but my mother in law is a health nut so maybe I'll try it again. Anything else with a kick/wow factor?
Mashed root vegetables of some sort. Could use plain potato and spice it up the way you would your standard stuffing, or you could experiment with mashed sweet potato, parsnip, turnip, etc..
