I make that exact drive every day, and sad to say there's not much going on. Green Papaya in Canton has decent Thai food in a casual atmosphere. Old Speckled Hen in Norfolk seems to have closed, but it looks like there's some work going on in there. Maybe a new place will open up soon.

And the bistro in Infinity Hall next door (to the former Old Speckled Hen) should be opening in the next month or two.

Not too far off 44 is John Andrews in Egremont, MA. Although some service issues have come up on this board, the food is by most accounts excellent.

Two more suggestions on the eastern end of your simsbury to salisbury route.

Joe Pizza in Canton has one of the best burgers around. It's a good sized hunk of meat which they'll cook medium rare or however you want it. Excellent!

Portobello is an old fashioned "red sauce Italian" restaurant in New Hartford which is superb. Nothing fancy, very casual, reasonably priced and delicious. I love their Veal Parm, Scallops Scampi and Linquini with clam sauce. Never had the pizza but based on the volume of takeout orders I see going out of there, it must be pretty good.
