Tapas in Madrid

We are going to be staying in the Plaza Santa Anna area of Madrid next month for 4 days. Does anyone have suggestions of tapas bars that we should check out? Or outstanding restaurants in general. We like to eat and drink ! Any suggestions, advice will be greatly appreciated. Thanks
