Who do you think are the best chefs in Austin?

I'm asking because I'm looking to start a cooking career. I don't have any professional kitchen experience, and I want to learn from the best. Thanks!

If I was going to work under any chef in Austin, it would be Chef Charles Mayes at Cafe Josie. He's not only a great Chef but he's friendly, easygoing and a genuinely nice guy. That said, there's a surplus of chefs in Austin because of the culinary schools. I've heard of recent grads of these schools working as fry cooks for $9.00 an hour.

    Good luck.

We ate Shawn Cirkiel's food last week, at The Parkside Lounge on 6th, and loved it.
That having been said, unless you're the luckiest and most savvy person in the world - walking in and getting a chef-side job - will be a trick. Good luck!

        Hi:

We're sorry, but we've removed a lot of general advice about starting a cooking career, as that discussion is beyond the scope of our boards. However, you are welcome to discuss who you think are the best chefs in Austin.

Thank you for helping to keep the discussion focused on local chow.
