Best chefs in Austin?
If I was going to work under any chef in Austin, it would be Chef Charles Mayes at Cafe Josie. He's not only a great Chef but he's friendly, easygoing and a genuinely nice guy. That said, there's a surplus of chefs in Austin because of the culinary schools. I've heard of recent grads of these schools working as fry cooks for $9.00 an hour.
We ate Shawn Cirkiel's food last week, at The Parkside Lounge on 6th, and loved it.
That having been said, unless you're the luckiest and most savvy person in the world - walking in and getting a chef-side job - will be a trick. Good luck!
