Does anyone have some ideas on how to make this delicious dish? My wife recently had it at Johnny Seesaw's in Vermont and she would like me to attempt it...I know the main ingredients are chicken breast, smoked cheddar, sharp cheddar, spinach and maple syrup....Thanks in advance....

unfortunately as far as i can tell it's not a "standard" or traditional dish - it's a proprietary recipe created by the restaurant. contact them, they might be willing to share it with you.

I agree. There are hundreds of recipes that include maple syrup in the preparation of chicken dishes, some using Asian ingredients and others suggesting a more western flair, but the specific recipe you're looking for is (in all likelihood) proprietary. That said, you seem to have enough of the ingredients identified that you should be able to work with a published recipe for Vermont Maple Chicken or something similar and achieve your goal.
